Food Inspired by Nature

As you may know we don’t do art books at MENDO and by claiming that we risk a to start the never ending debate on what is art and what isn’t. Some say photography is art. Some say street art is art. Others even claim fashion is art. May we add extraordinary culinary creations to that list? See Quay to understand what we mean. Quay – the place where ships dock to load and unload - is the name of Peter Gilmore’s restaurant in Sydney, one of the top 50 restaurants in the world. Gilmore describes his creations as food inspired by nature. To us, the names of his creations are art by itself. “Slow-braised berkshire pig jowl, maltose crackling, runes, soubise cream perfumed with prune kernel oil”. I mean, that makes ‘Nachtwacht’ sound like a creation from kindergarten. And then there are these images. If you think they look good on your screen, check the book: ten times better. Unfortunately Quay is located on the other side of the world, but if his art tastes only half as good as it looks it’s worth the trip.

What’s in a name? One of Gilmore’s managers is called Michelle Cook.
